The Cherubino range are our signature, the sign of our best work. From our best parcels in Margaret River, sub-region of Wilyabrup. Hand harvested and sorted, 6 weeks maceraction, 12 months oak ageing. Aromas of black berries and find nuances of dried bay leaf. The oak is gentle with soft tannins and spice notes with a long complex finish.

Hand-picked and crushed to stainless steel fermenters where it stayed for 3 weeks with gentle maceration. The time on skins allowed for softening of the tannins. Components were aged for 10 months in a French oak barrels. Inky purple blackcurrant and bay leaf, layered with secondary cedar and chocolate. Velvety soft tannins and a long finish.

Then 6 months on a mixture of aged French oak. The wine is softley textured, fresh and vibrant with flavours of black cherry and earthy beetroot. The wine has a soft, silky finish.
