Bailly is the birthplace of the AOC Cremant de Bourgogne. Since 1972, Bailly Lapierre, a small co-operative cave to the south of Chablis in Auxerrois, has been producing sparkling wines in an ancient underground quarry that lies more than 50 metres deep in the bedrock.
This location, providing natural humidity and a constant temperature, ensures unique and perfect conditions that are ideal for the production of Cremant de Bourgogne wines. Over 400 winegrowers form part of the co-operative, with everything hand harvested and made in the traditional method.
Caves Bailly Lapierre are committed to reducing their environmental impact, having been certified HVE (High Environmental Value) since 2019 – this certification ensures that the agricultural practices used on all farms preserve the environment. As part of this commitment, they have become fierce protectors of local species and natural biodiversity, increasing the populations of native bats and bees.
