Production note

Fruit is crushed and de-stemmed before alcoholic fermentation in open-top fermenters. Fermentation lasts 7-8 days, during which the cap is managed using a combination of pumping over as well as regular punching down by hand. After fermentation, 40% of the wine undergoes a period of extended maceration on the skins before a very gentle pressing. Malolactic fermentation takes place in tank and barrel. The wine is then aged in French oak for 14 months before blending and bottling.
