Production note

The grapes are cold soaked in fermenters, inoculated with selected and wild yeast strains, and then gently basket pressed and left to relax for 14 months in French oak barrels. During this time the wine undergoes malolactic fermentation. The wine is then blended, fined, filtered and bottled.
