Production note

All of the grapes are gently de-stemmed and crushed, then inoculated with Pasteur Red yeast. Pumping over occurs twice daily, with the temperature peaking at 90º F. Maceration time varies from 12 to 28 days depending on the wine lot. The wine is aged for 20 months in French oak barrels (35% new) before bottling.
