Production note

The grapes are hand-harvested as each varietal reaches optimum ripeness. Carefully de-stemmed, the berries are partially crushed into small open top fermenters where they briefly soak prior to fermentation. This initiates the gentle extraction of colour and tannin. Following fermentation, the wines are left to macerate on the skins for up to 15 days, serving to help the integration of tannin and colour. Matured in Demptos French Barriques (35% new) for 12 months.
