Production information

Producer: Petaluma

Petaluma had one aim when it was founded in the late 1970s, to create the best possible wines from South Australia. Seeking out the finest vineyard sites rather than taking a one-site-fits-all approach to its grapes. Naturally, the search for a Cabernet vineyard took Petaluma to the Terra Rossa soils of Coonawarra. Similarly, the quest for a Riesling site led the team to the Clare Valley. Petaluma pioneered production in the Adelaide Hills and the Piccadilly Valley, which provide Chardonnay of great purity and concentration, including the legendary Tiers Vineyard Chardonnay.

Production note

Handpicked in March, the fruit was de-stemmed, crushed and chilled to 5°C and then pressed in a Willmes tank press. The juice was allowed to settle by gravity to near clarity, before being racked to five year old French oak barriques and inoculated with Petaluma’s chosen yeast strain. The primary fermentation was followed by maturation on yeast lees for a total of three months in oak.
