Production information

Producer: Petaluma

Petaluma had one aim when it was founded in the late 1970s, to create the best possible wines from South Australia. Seeking out the finest vineyard sites rather than taking a one-site-fits-all approach to its grapes. Naturally, the search for a Cabernet vineyard took Petaluma to the Terra Rossa soils of Coonawarra. Similarly, the quest for a Riesling site led the team to the Clare Valley. Petaluma pioneered production in the Adelaide Hills and the Piccadilly Valley, which provide Chardonnay of great purity and concentration, including the legendary Tiers Vineyard Chardonnay.

Production note

De-stemmed, crushed, chilled and gently pressed. Cold settled, then racked to new French oak barriques for fermentation. Primary and malolactic fermentations in barrique with native Petaluma yeasts. The wine spends 10 months on lees with intermittent lees stirring.
