Production information

Producer: Petaluma

Petaluma had one aim when it was founded in the late 1970s, to create the best possible wines from South Australia. Seeking out the finest vineyard sites rather than taking a one-site-fits-all approach to its grapes. Naturally, the search for a Cabernet vineyard took Petaluma to the Terra Rossa soils of Coonawarra. Similarly, the quest for a Riesling site led the team to the Clare Valley. Petaluma pioneered production in the Adelaide Hills and the Piccadilly Valley, which provide Chardonnay of great purity and concentration, including the legendary Tiers Vineyard Chardonnay.

Production note

Handpicked in March, whole bunches are de-stemmed and crushed. Petaluma uses a combination of small open fermenters and Potter heading-down-board fermenters. The ferments lasted between two and three weeks, at which point the wine was sugar dry. The 2008 Shiraz spent a total of 20 months in oak, a mixture of two thirds new and one third older barrels.
