Producer: Palena

Since their inception, the Palena range of wines were intended to be seen as much more than just a brand name. The name comes from the area of Palena, which is a natural reservoir of pure waters and virgin forests in Patagonia, the southern-most corner of Chile. The Palena mission is to make is to make best use of the natural advantages within Chile and to produce wine from the most outstanding regions. The grapes are sourced from vineyards in Chile’s leading terroirs within the Central Valley.

Production note

The bunches were de-stemmed, not crushed, cold macerated for 6 hours before pressing. Fermentation in stainless steel tanks and temperature carefully controlled. After alcoholic fermentation, there was no malolactic fermentation, though the wine was left on light fermentation lees and stirred once a week.
