    Production note

    This steep, north-facing hillside parcel has predominantly calcareous soils and is organically farmed to preserve the full expression of the terroir's unique character. Fermentation takes place in open concrete tanks with manual punching down. The wine then matures for 12 months in neutral 500-litre French oak barrels, followed by a minimum of one year bottle ageing. The wine has a remarkably unique personality imparted by the parcel's soil.
