Production information

Producer: Michael Mondavi

Michael Mondavi is one of the best known names in Californian wine, and the eldest son of the late Robert Mondavi with whom he co-founded the Robert Mondavi Winery in Napa Valley in 1966. The Mondavi dynasty needs little introduction. The family can be credited with establishing the Napa Valley as a fine wine region and Cabernet Sauvignon as its signature wine.

Production note

Hand harvested grapes are de-stemmed and crushed, combination of submersion and aerative pump-overs which keeps tannins supple while maximising depth of fruit extraction. Extended maceration average 21-28 days before pressing. The wine was transferred into French oak barrels (45% new) for malolactic fermentation and 22 months of aging, followed by 6 months aging in bottle.
