Product guide note

Valpolicella is a famous Venetian wine made from a blend of native Italian grape varieties. It is light bodied with a soft, velvety texture and juicy fruit flavours of cherries and plums.

The wines run the whole range of the Valpolicella spectrum, from the anything but basic Classico and Classico Superiore, which establish a house style of vibrant, bright cherry fruit and ripe, elegant tannins, up to the epic dry Amarone and sweet Recioto. These latter two are made from grapes that are dried out almost to raisins in aerated lofts, concentrating the intensity of flavour.

Production note

Fermentation lasts for about 12 days with grape skins, after a soft pressing. Fermentation temperature is important - it should never go over 26°C to ensure all flower and fruity perfumes are left intact.
