Production information

Producer: Nicolis

The wines run the whole range of the Valpolicella spectrum, from the anything but basic Classico and Classico Superiore, which establish a house style of vibrant, bright cherry fruit and ripe, elegant tannins, up to the epic dry Amarone and sweet Recioto. These latter two are made from grapes that are dried out almost to raisins in aerated lofts, concentrating the intensity of flavour.

Production note

After the grapes are selected and harvested in a vineyard located in an optimal area, they are placed in small cases and transferred to dry and well aired big rooms. In this way, the grapes wither naturally and thus have a high concentration of sugars, glycerin, and aromas. After 3 months, the withered grapes are softly pressed. Due to the low temperature, the process of fermentation is long and slow. Maceration can take longer than a month. The wine is then aged partially in medium-sized Slavon
