The Newton Johnson family has been at the heart of Cape winemaking for many years, but only recently took the plunge and set up its own estate. The winery is based near the seaside town of Hermanus, an hour and a half’s drive out of Cape Town. Read more

Production note

All the grapes are harvested by hand and cooled down overnight. The bunches are hand-sorted, destemmed and crushed. Cold maceration ensues for 3 to 6 days. The primary and malolactic fermentation is 100% natural (no cultured yeast or inoculant is added). Only punching down is applied for extraction. After pressing the wine is racked and left to complete its malolactic fermentation and mature in oak barrels.
