Product guide note

The Shiraz grape variety is also known as Syrah and is a very popular choice for a lot of people. It makes wines with lots of warm spiciness, pepper and dark fruit. This wine is also quite rich and full with some flavours of red cherry and blackberry.

Producer: Madfish

The winery takes its name from MadFish Bay, which can found near Denmark in Western Australia's Great Southern, an area where, apparently, fish go loco. MadFish are wines with an emphasis on enjoyment and drinkability, producing a number of styles, namely the much-lauded MadFish Chardonnay and Shiraz, the Pinot Noir is pretty good too. The range is designed to reflect Western Australia’s laid-back lifestyle; both the packaging and juice are right on the money.

Production note

Once harvested, the grapes were then fermented in stainless steel tanks with traditional pump-overs carried out each day to aid fruit and tannin development. The parcels of fruit were then pressed to French and American oak barriques for 12 months maturation to encourage wine development and structural complexity. The use of French oak allowed for the integration of dusty savoury tannins and the American oak introduced rich, toasted vanillin flavours.
