Producer: Jaffelin

Jaffelin are one of Burgundy’s historic negociant producers with a history stretching back to the early 19th Century. The firm originally produced the spirits Marc and Fine de Bourgogne, entering the wine business in 1816. Henri Jaffelin, the man who broadened the company’s horizons to include wine, had one motto: “Burgundy, nothing but Burgundy” – a maxim that still applies today.

Production note

The grapes are pressed. The juice is put in a still tank for 1 night. Afterwards, the juice is put in barrels to do the alcoholic fermentation at a low temperature of 17°C. Malolactic fermentation takes place during 6 months.
