Hawksburn’s wines are made by Matt Douglas, who’s relationship with Bibendum goes way back to the days when he used to work in our London office. Very much a boutique outfit, the grapes are grown in vineyards around Matt’s house. He has just 1.2ha of Pinot Noir (to put that in perspective, the Romanee-Conti vineyard covers 1.8ha!) and the wine is completely hand crafted in every sense. Handpicked, plunged and racked, it sees only a small amount of new oak allowing the fruit to take centre stage.

Production note

The grapes are usually picked at the beginning of April, the top and bottom blocks picked and fermented separately. Fermentation lasts for about 20 days, with a peak temperature of 34°C. All the fermentations take place in stainless steel. The wine is then aged in barrel for 11 months (30% new) with inoculated malolactic fermentation in the spring.
