Product guide note

This wine is made from a grape variety called Pinot Noir. The grapes are grown at higher altitudes and so temperatures are cooler. This is good for Pinot Noir who doesn’t like to get too hot. The wine is soft and fruity with ripe cherry, raspberry and spice flavours, and a smooth, silky finish.

Production note

Yields are deliberately kept low following crop thinning in June. The grapes are picked at the end of September once they have reached perfect ripeness. The harvest is destemmed and then vinified with traditional maceration in stainless steel vats with very precise temperature control. Regular tasting of the musts determines the frequency of the pumping over operations. After the alcoholic fermentation, which lasts roughly 20 days, part of the wine (60%) is aged in 225-litre barrels for 8 to 12 months. Light fining is performed as required before bottling.
