Production note

The grapes are de-stemmed and then vinified with traditional maceration in temperature-controlled stainless steel vats. The temperature is stringently monitored and the grape must is regularly tasted to determine the frequency of the pumping over operations. After the alcoholic fermentation, which takes roughly 20 days, part of the wine is aged in 225-litre barrels for 8 to 12 months. A light fining is performed, as required, before bottling.
