Production note

Picked at optimum ripeness and then destalked and crushed and allowed 4 hour skin contact. Juice then drained and skins are pressed. 20% of the juice is fermented in older French oak barrels and balance fermented in stainless steel. 4 months in barrel and then cross blended with that in tank.
