Production note

The fruit was harvested during the cool night hours, and rushed directly to the winery to be gently pressed. The juice was left to settle at cold temperatures and then racked into stainless steel fermenters, where it was inoculated with specially selected yeasts to initiate fermentation. The combination of stainless steel vessels and long, cool fermentation temperatures preserved the delicate fruit and floral aromas that characterise this wine.
