Production note

Grapes were hand harvested. De-stemmed into small lot fermenters. After a brief cold soak, the must was slowly warmed, which enhanced colour and flavour extraction. Once fermentation was complete, the wine was aged in a combination of French and American oak to soften and integrate the tannins. A touch of Zinfandel was added for a bit of pepper and spice. Just prior to bottling, the wine was transferred to tank with minimal filtration to ensure the maximum expression of the wine's bright fruit flavours and aromas.
