Producer: Domaine Jean Thomas

Domaine Jean Thomas has owned some of the finest vineyards in St. Veran since 1934. Situated in Prisse near Pouilly-Fuisse, we visited this part of St. Veran when looking for excellent value white Burgundy, where it has the same classic limey clay soils as its more famous neighbour. The Domaine owns 12ha and all are in compliance with environmentally-sensitive agriculture.

Production note

The grapes are gently crushed in a pneumatic press then left to settle at a low temperature to clarify the must. Fermentation takes place in inert tanks at 16°C. The wine is aged on its lees for 6-8 months before fining with bentonite, light filtering and bottling.
