In a quiet corner of south west France lies Domaine Cauhape. In this secluded part of the country, within touching distance of the Pyrenees, Henri Ramonteau works on his 42 hectare vineyard. Only native varieties are planted here, including Gros Manseng and Petit Manseng. Both varieties are known for their electrifying acidity, a necessary trait given the clay soils on which they are planted. Clay adds richness and depth to wines so the varieties are well placed at Domaine Cauhape to pick up these complementary characteristics.

Production note

Grapes hand-harvested in small quantities at the beginning of October.Grapes de-stemmed, followed by whole bunch maceration for 12 hours. Grapes then gently crushed in pneumatic press. Selection of juice (first pressing).Maturation in stainless steel tanks on the fine lees for a period of 6 months.
