Production note

Harvested by both hand and machine, the grapes are conveyed for pressing and immediately treaded upon filling the press. Decantation of the must, which undergoes clarification following pressing, is completed within 24 hours. The must ferments in stainless steel tanks only, thermo-regulated at between 18 and 20°, during 15 to 20 days.Bottling is programmed after the malolactic fermentation step before summer, around june/july.
