Individual vineyards, ecological wine practices (including some vineyards certified as organic) and a new winemaker all add up to an incredibly exciting portfolio ranging from Reserva upwards. Chilcas’ approach is to nurture individual parcels and vineyards to create wines with individual character and personality. The wines are quite different from the vast swathes of generic, branded wines to come out of Chile at similar price points.

Production note

The grapes were hand-picked the third week of April and transported with care to the winery immediately, where they were inspected on a sorting table, destemmed and the berries gently crushed. A 3 day maceration at 8 to 10°C followed. 100% of the grapes were then fermented in stainless steel tanks for 25–28 days at 27–28°C. During fermentation, 4 to 6 pumpovers were carried out to move 50% to 100% of the volume, as determined by enological tasting. 70% of the blend was aged in barrels for 8 to 10 months. The wine was naturally cold stabilized during the winter and later earth-filtered prior to bottling.
