Product guide note

Chianti is a region in Tuscany in Italy. It is made from the Sangioveto grape (pronounced Sanjee-ohvehtoh), a traditional Tuscan variety. This complex wine has layers of dark fruit flavours, along with hints of spice, tobacco and liquorice.“Riserva” means the wine was aged before being sold and will have more complex flavours and maybe a hint of oakiness.

Castellare di Castellina does not follow fashion. While many Chianti wineries have lost touch with their Tuscan roots and experimented with blending French varieties and local grapes over the past few decades, the wine made at Castellare keeps a strong commitment to the traditional Tuscan variety of Sangioveto, the original local name for Sangiovese.

Production note

The must is fermented in steel vats for 18 to 21 days at a controlled temperature of 28°C. It then goes through malolactic fermentation before being aged for 15 months in used barrique.
