Chianti is a region in Tuscany in Italy. It is made from the Sangiovese grape (pronounced Sanjee-ohvaysee) and has refreshing, red cherry flavours. “Riserva” means the wine was aged before being sold and will have more complex flavours and maybe a hint of oakiness.

Castellani has over a century of winemaking history in Tuscany, exporting its wines since 1903 from the family base near Pisa. Still family owned and managed by Piergiorgio Castellani, this Tuscan empire now includes five separate estates dotted around the region, from the Fattoria di Travalda in the Arno valley, to the Campomaggio vineyards in the heart of Chianti Classico.

Production note

Completely mature grapes are harvested from vineyards and crushed almost immediately. Afterwards the grapes are poured in large inox tanks for fermentation. The primary fermentation evolves at a controlled temperature of 23 to 24°C for a certain period until the extraction of 25 to 30gr of sugar. When the primary fermentation is perfect, the wine is filtered and stored at a constant temperature in Slavonian oak casks for a minimum period of 24 months.
