Production note

De-stemming and crushing of grapes which are then transferred to open top concrete tanks passing through a paste exchanger for lowering the temperature to 10-12°C. Maceration for a few hours with static bleeding of must. The acidity and pH levels are then corrected and clarification. A period of static decanting. After 24 hours, racking of the clean must with the addition of selected yeasts and fermentation at 14-16°C.
