Fermentation, using the process called bica aberta, lasted for nearly one month with temperatures varying between 14º and 16ºC.
The wine was kept for 5 months in stainless steel vats.

The Moscatel grape variety - from which this wine has been made - is this only grape variety that actually smells like grapes themselves! Other than grapes, this wine has aromas of white blossom and flavours of tropical fruit like lychee.

This eighteenth century Douro wine estate is actually one of the most modern-looking in Portugal. Although the team uses the traditional panoply of indigenous grapes, their methods are bang up to date and the results are nothing short of sensational.
Unusually for the region, Quinta do Vallado's priority is making table wines rather than Port, although their 10 year old Tawny is a superb partner for everything from ripe Stilton to ginger cake. The success of this approach has been borne out by the spicy, rich Tinto Reserva walking off with a host of trophies at both the IWC and Decanter awards.
