Champagne remains the epitome of fizz, the ultimate sparkling wine that is often imitated but rarely bettered. To be labelled as Champagne, a wine must be made from grapes grown in the eponymous northern French region and made using the ‘traditional method’ (a secondary fermentation takes place in the bottle to add the bubbles). Anything else is a lawsuit waiting to happen.
