Tasting Notes
An intense aromatic profile of dark cherries, cassis, espresso with elegant underlying sweet cooking spices. Full bodied on the palate withna beautiful lingering structure.
Vinification Details.
fermentation at 28 to 32C in small open top fementers, punching the cap by hand. Long post fermentation maceration on skins. Aged for 18 months in barrels. At the end of the barrel maturation period, the current vintage is blended with the previous edition.
Producer Information
Laid back New Zealander Brett Jackson is very much settled in Chile - although he hasn't lost his lifelong affection for the All Blacks - and much of Valdivieso's success in recent years has been down to his efforts. Based in Lontue, the company has a wealth of vineyards and the quality of the terroir is shown by the Single Vineyard wines. The whole range encapsulates everything that Chile excels at: rich, vibrant flavours and smooth, glossy textures - and the wines deserve the multitude of gongs they have picked up in recent years.
Regional info.
Caballo Loco is perhaps the most unique wine in Chile. Made using a solera system, similiar to the ones used in Spain. 50% of the blend is fruit from the current vintage (in this case 2005) with the other 50% being older wines from the solera system dating back to 1990.
