Tasting Notes for Knappstein Cabernet Merlot 2005 75cl:

Intense plum & black berry fruits with lifted Merlot perfume on the nose. The palate shows generous cassis & sweet berry fruits> It is complemented by subtle oak & finishes with fine tannins.

Producer Information:

Knappstein is one of the biggest names in the Clare Valley, perhaps Australia's most enigmatic wine region. Home to both full-bodied rich reds and lean, lemony Riesling, Clare's split personality takes on a bit of Bordeaux, a bit of Alsace and a dash of the Rhone - all with a distinctive Aussie accent. Paul Smith is the man in charge at Knappstein and having learnt his trade with men such as Brian Croser and Jeffrey Grosset, is a paid up member of the Clare Valley Appreciation Society. In his first vintage, he released a new Single Vineyard Riesling that carried off the Gold Medal at the Clare Valley Wine Show and he hasn't looked back since, collecting medals and trophies at competitions around the world. A talented brewer in his spare time too, Paul also makes a stunning boutique lager.

Regional Info

The vines are always low yielding vines & on largely 'terra rossa' soils. The terra rossa soil is renowned for producing high quality red grapes. The warm days, cool nights of the Clare Valley are perfect for gradual flavour development and even ripening of the fruit.

Vinification Details

The wine was made with minimal intervention to preserve fruit purity. Fermented in static & open fermenters with gentle extraction of flavours & texture through pumping over once a day & hand plunging. Ferment lasted 14-18 days. The skins were then pressed & the wine was then matured in oak barrels.
