Tasting Notes for Katnook Estate Cabernet Sauvignon 2004 75cl:
A richly layered palate structure of ripe fruit, soft oak and fine tannins are the key features of this Coonawarra Cabernet. Ripe savoury dark berries, hints of mulberries and spicy plum fruit combine with sweet vanilla and bright, fresh acidity on the finish.
Producer Information:
Katnook Estate is one of the heroes of Coonawarra - a small, cool climate area in South Australia famed for its exceptional Cabernet and Merlot. The name Katnook is taken from a local Aboriginal word meaning 'fat land' and vines have been planted on the site since the 19th Century. It took until 1980, however, and the arrival of Wayne Stehbens for the wines to be launched under the Katnook label. 27 vintages on, Wayne is still in charge and has built the winery up into one of Australia's most respected, twice winning the Jimmy Watson trophy for best Aussie red. As well as the Bordeaux grapes, Wayne is a master of white wine too and the Sauvignon Blancs are particularly good with a dry, zesty, minerally style quite unique in Oz.

Coonawarra had an ideal growing season leading into the 2004 vintage, an excellent flowering and fruit set with above average yields and very cool and dry conditions during verasion are the features of the 2004 vintage season. Some rain just before harvest was followed by drying conditions that ensured the fruit was picked at near optimal condition. The season produced Cabernet Sauvignon wines with attractive ripe fruit flavours and generous palate structures with soft tannins.
Vinification Details
Matured in oak barrels, of which half were new. Our barrels, predominantly French oak, are sourced from forests near the centre of France, and a smaller proportion was American oak. Fermentation takes place for 5-7 days and the wine is aged in oak barrels for 20-24 months.
