The wine

The name "Low Profile" refers to the 200+ profile holes dug by the team to determine the best sites to plant vines. The wine is made up from a selection of softer, earlier drinking barrels. Low Profile is made up of 50% Syrah, 28% Mourvedre, 15% Touriga Nacional and 7% Trincadeira.

A spicy nose of juicy wild fruits and slate is present. The palate is rich with soft tannins to provide a textured, easy finish. Perfect with flavoursome dishes like goose or roast beef.

The vintage

In the winery, the grapes are de-stemmed and gently crushed directly into small open top tanks and oak vats. Then after a five to seven day skin contact period, during which natural yeast fermentation occurs, a single pressing takes place. There is malolactic fermentation in old French oak barrels. Maturation lasts eighteen months with several rackings to clarify the wine. The wine may throw some sediment as it is bottled unfiltered and unfined.

2012 was a good growing season with few problems. Harvest was quite early with cool conditions. Some mist and light rain during harvest, contributed to a softer, more subtle wine, without losing complexity.

The vineyard

The stony soils of the Sijnn vineyards, together with a warm dry climate moderated by constant sea breezes, provide an ideal terroir to produce something unique. Most of the soils have about 600mm round pudding stones on the surface with weathered schist in the subsoil. There’s definitely a touch of Chateauneuf-du-Pape about the place. All vines are grown as bush vines due to the exceptional low yield from the 7- & 8-year-old vines. This selection is mostly from the lower lying vineyards that have slightly more loamy, weathered schist soils.
