Bibendum partnered up with Jazz FM and Square Meal to launch a monthly series of conversations with restaurateurs and chefs. This episode features Dan Doherty, Executive Chef of London's first 24 hour restaurant, Duck and Waffle.

Native Brit Daniel Doherty began his career at Michelin-starred 1 Lombard Street before honing his skills at Roux Fine Dining. In 2008, he became head chef at The Ambassador in Exmouth Market, and shortly after accepted the position of head chef at The Empress in Victoria Park. 2010 saw Doherty open The Old Brewery in Greenwich, which received accolades including Best British Restaurant (2011) thanks to its artisanal menu.

The following year, Doherty become executive chef at Duck & Waffle, London’s first 24/7 gourmet dining restaurant. His awards include Rising Star Chef at the 2013 Tatler Restaurant Awards and being named one of London’s 1000 Most Influential People of 2014 by the Evening Standard. He is the youngest member of The Royal Academy of Culinary Arts to date.
