A recipe for Falernum

Corn 'n' Oil cocktail

Once a closely guarded secret of the tiki bars of America, now part of the rum revival happening in bars across the world, Falernum can add depth and sweet spice to any drink.

A clove and lime based liqueur, it appears in the national cocktail of Barbados, the Corn 'n' Oil. Simply pour 2 parts rum and 1 part falernum over ice and garnish with a dash of bitters.

It’s pretty straightforward to make your own Falernum. There’s no concrete recipe, you can change it around as much as you like. Let your creativity run wild! To give you an idea of what the core flavours are, here’s a basic recipe to get you started:


24 cl Overproof Plantation Rum

Zest of 10 limes

85 g ginger, peeled and diced

7 g nutmeg, grated

1 batch rich simple syrup (2:1 sugar to water)


Mix rum, cloves, lime zest, ginger and nutmeg together in a sealed container, and let sit for 24 hours. Strain the infusion with a fine mesh sieve and blend it with the rich simple syrup Let the syrup and infusion steep for several hours before use.

Store in an airtight container in the refrigerator for up to one month.
